the weather is getting cooler and all of my foodie magazines have glossy images of comfort food. thinking it's a good thing we purchased a treadmill this weekend...
meatless monday : sweet potato + black bean burritos. we've had these once before and i really enjoyed it. the homemade dressing for the simple lettuce salad? awesome.
i've selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i'm nice like that.
tuesday : BLTs. andy has requested this summer sandwich of choice each week until tomato season is over. i'm only happy to oblige. [1] because he's in charge of frying the bacon - i hate the mess. and [2] who doesn't love a BLT?
wednesday : stovetop chili mac. from the latest everyday food. pasta with corn. the girls should love this.
thursday : chicken with caramelized onions and tomato sauce. i've put this on our weekly menu for the last two weeks and we've yet to have it. here's hoping we actually get to try it this time.
friday : pizza. loving all the fresh veggies from our csa box piled high on our weekly pizza.

I was stopping by from Organized Junkie and I saw your Thursday meal.... I had to stop and take a second look. I made that tonight. It's actually Chicken with caramelized onions, grape tomatoes, feta cheese, balsamic vinigar, and basil. That's the main part of the meal. I got the recipce from "For the Love of Cooking" blog. I would love to try the stove top chili mac. Sounds great!!!

have you ever made bacon in the oven? it's the only way i make it now. no splattered bacon grease over the stove and cleanup is quick + easy if you line the cookie sheet with foil first.

i do! if i make bacon, thats how it do it. the only downside is that it takes longer to make it as you can only fit so much on a tray.
i do save the bacon grease and use it to pop popcorn in - SO GOOD.
