menu plan monday : 3.12.12.



after a week of birthday-ing and too much eating out due to house projects, i'm ready to get back to cooking and a more healthy menu.  that is until this weekend when we'll be celebrating with another two birthdays...

meatless monday : spaghetti with garlic, oil and chili flakes.  a pinterest find.  will likely have to tone down the chili flakes a bit for the girls but then i can just add extra to my serving at the table.

i've selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i'm nice like that.

tuesday : baked chicken caesar chalupas.  we didn't get to these last week but i'm eager to give them a try!

wednesday : mini ham + cheese quinoa cups.  i have some extra cooked quinoa on hand and don't want to let it go to waste.  this looks like an easy thing to make in the afternoon and then let the girls decide if they'd like to eat it warm or cold after (hopefully) getting to play outside in the afternoon.

thursday : easy lemon chicken.  love how this dish has integrated itself so easily into our menus.  so easy and there has yet to be any leftovers.

friday : pizza.  our tigers are playing friday afternoon so i hope to be celebrating another tiger victory at dinner!



new recipe review from last week : 

turkey stuffed peppers.  these ended up as a lunch for andy and i while the girls were supposed to be napping.  i loved that they were lighter and as i hadn't checked to see much rice i had on hand - which was hardly any - i substitued quinoa instead.  i liked these more than the skillet stuffed peppers we usually have but andy disagreed.  i figure i'll keep it in the rotation and have two pepper recipes to pick from in the future.  next time i'm thinking i'd like to add some diced tomatoes to the filling as well.

crockpot bbq beer chicken.  a definite hit!  there were absolutely no leftovers.  and it made the house smell so good all day long.  a perfect meal for watching a game.  will definitely be making again! 


I made the mini ham & cheese quinoa cups for my sister's wedding shower.
They were a hit! And so easy to make.
