1.5 cups flour
1.5 teaspoons baking powder
1/4 teaspoons baking soda
1/4 teaspoon cinnamon
1 egg
1 cup mashed bananas [3 medium]
3/4 cup sugar
1/4 cup cooking oil
1 teaspoon finely shredded lemon peel
1/2 cup chopped pecans
grease the bottom of loaf pan and set aside. in a medium mixing bowl, combine the flour, baking powder, baking soda, cinnamon and 1/8 teaspoon salt. make a well in the center of dry mixture and set aside.
in another bowl combine the egg, bananas, sugar, cooking oil and lemon peel. add egg mixture all at once to dry mixture. stir just till moistened, batter should be lumpy. fold in nuts.
spoon batter into the prepared pan. bake at 350 degrees for 50 to 55 minutes. cool on wire rack. wrap and store overnight before slicing.
adapted from better homes and gardens. the lemon peel is the secret. gives it just a little something extra. a great use for extra bananas that everyone has long since forgotten about.
